Right now, when selecting spaces to subscribe to, I get a list of all spaces available to me. This list needs to be sortable and filterable, especially in instances with dozen or even hundreds of spaces.

We just released this feature with Linchpin Enterprise News 2.17.0 as well as Linchpin Intranet Suite 5.1.0. Both releases are available in the Atlassian Marketplace.
You can filter your news subscriptions by entering search terms, filter spaces by their default language (Linchpin Suite customers only) and get detailed information about the subscribable space (e.g., date of the newest blog post, number of blog posts, preview of the news feed).

A quick update on this one. 
Within the news hub you can now configure the spaces that are offered for subscription by space category, which before was only possible within the Cover Stories and Personal News Feed macros. 
In a next step we will be implementing filter options as well, so you can for example filter by name.

Thanks for that suggestion, Peter Scheidt. I agree fullheartedly, and we already have that on our roadmap. I cannot say when exactly we'll tackle it, but it will be this year in any case.
